On 6 April, we’re hosting a one-night collaboration with Papa Dumpling. Bonsai’s Head Chef Arion Christophers and Papa Dumpling founder Liam Thorpe have put together a seven-course menu that brings both kitchens to the same table.

Arion and Liam have been friends for over ten years. Their first pop-up together happened when they were 18 and 19, and they’ve been talking about doing another ever since. After a couple of months planning, it’s finally happening. Expect Bonsai’s style of bold, balanced dishes alongside Papa Dumpling favourites reworked into plant-based form.

The menu moves through dishes from both kitchens: ssam jang mushrooms with crispy rice and shiso, lion’s mane and king oyster skewers with mushroom and truffle BBQ and nori crumb, and a kimchi and “pork” dumpling in kimchi and tomato broth with spring onion oil. Papa Dumpling brings a “fish and chips” dumpling with matchstick fries, katsu sauce and peas, followed by Chinese-style sausage with Szechuan and Shaoxing wine caramel from the Bonsai side. Then a Big Mac bao with “beef” crumb, before finishing with a banana and miso ice cream sando with soy sauce caramel and hundreds and thousands, made together by both kitchens.

£45 per person. Tickets must be purchased in pairs.
