On Monday 27 July, we’re hosting a one-night collaboration with Studio Gauthier. Bonsai’s Head Chef Arion Christophers and Studio Gauthier Head Chef Alexia Dellaca-minot have put together a six-course menu that brings both kitchens to the same table.

This is a collaboration we’ve wanted to make happen for a long time. Having visited each other’s restaurants and followed each other’s work, it felt like the perfect fit: two plant-based kitchens with different styles, both built around bold flavours, detail, and a genuine love for changing people’s perception of plant-based cooking.

Studio Gauthier is one of the UK’s most respected plant-based fine dining restaurants, known for refined, thoughtful cooking and a creative approach to vegan food. Bringing that together with Bonsai’s more relaxed, fire-led style makes this a really special one-night-only menu.

The menu moves through dishes from both kitchens: satay and beef croquettes with mushroom and satay broth, brioche feuilletée with caramelised shallot and miso butter, and bincho grilled mushroom skewers with vadouvan sauce and courgette salad. There’ll also be fresh dumplings with sunflower and saffron stuffing, tomato dashi, Thai broth and lemongrass, followed by fennel and yellow beetroot pressé with umami sauce, ssamjang, cherry, broad beans and fine fricassée. To finish, custard ice cream with pickled berries, blackberry caramel and shiso meringue.
