Our Story

Bonsai Plant Kitchen was originally co-founded by Dom and Arlo and is now directed by Chef Dominic Sherriff, 29.

 The journey has been a short, yet an exciting one. Bonsai started life as a takeaway in January 2021, operating out of a disused cafe during lockdown. When the world began to open up again, we became a pop-up in a pub kitchen - until finally taking the leap and opening our very own restaurant in March 2022.

We wanted to bring plant based food to the masses; creating experimental, unique dishes that even the most die-hard meat-lovers would enjoy. We wanted devout vegans to, at last, have an exciting place to eat.

Using Chef Dom’s experience from Vietnamese cooks in Hoi An, exploring Tokyo and it’s
hole-in-the-wallIzakayas, and the bustling alleyways of Bangkok’s food markets, Bonsai Plant Kitchen was born.

We are a South-East Asian inspired restaurant with a menu dishing up the best of the plant world! Both with our food and our style of service, we prioritise flavour and innovation.

Small plates are cooked over smouldering Japanese coals, and served with carefully curated botanical cocktails, authentic sake, and carefully selected wines - all with a focus on local Sussex ingredients.
